White Bean Turkey Chili

Ingredients

  • 1 tbsp avocado oil
  • 1 onion, chopped
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 1 sweet potato, diced
  • 1 lb ground turkey
  • 1 can cannellini beans, rinsed
  • 1 can garbanzo beans, rinsed
  • 1 can gluten-free chicken broth

Instructions

  • To a large pot add in the oil, onion, celery, carrots, and sweet potato
  • Cook on medium heat until the onions are slightly translucent
  • Once onions are slightly translucent add in the turkey and brown it
  • Once the turkey is brown, add in the rinsed beans and the chicken broth, cover and let cook for about 40 minutes on low
  • Once done, serve and enjoy!
