Garlic Beet Hummus

Ingredients

  • 1 can beets drained
  • 1 can chickpeas drained
  • 2 tbsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 cup Lemon Juice
  • 1/4 cup tahini
  • 2 tbsp extra virgin olive oil

Instructions

  • Drain the liquid from the can of beets and the can of chickpeas
  • Add in all of the ingredients to a food processor and process until smooth
  • Transfer to airtight container and keep in fridge for up to 1 week
  • Enjoy!

Notes

The liquid from the can of chickpeas is called Aquafaba! It has many cool uses so reserve if you feel like getting creative!
Add a dash a lime juice for an extra boost of flavor!
This hummus pairs well with tortilla chips and prepared fresh snacking vegetables.
