Brazilian Cheese Bread Recipe

- 1/2 cup almond flour
- 1/4 cup tapioca flour
- 1 tsp xanthan gum
- 1/2 tsp baking powder
- 1/4 cup butter, melted
- 1/4 cup heavy cream
- 1/2 tsp apple cider vinegar
- 1 large egg
- 1/2 cup mozzarella, shredded
- 1/4 cup cheese mix (parmesan, asiago and romano cheese in equal parts)
Preheat the oven to 400F/190C
Line a cookie sheet with parchment paper and set it aside
Mix almond flour, tapioca flour, xanthan gum, baking powder, and salt in a bowl and set it aside
Place butter, cream, and apple cider vinegar in a saucepan over medium heat
Add the butter mixture into the dry mixture and combine.
Add in the eggs and cheese to the mixture and mix until a dough consistency is formed
Use a #60 cookie scoop to portion the dough, roll each portion into a ball and place it onto your prepared cookie sheet
Bake for 20 minutes, or until the rolls start to brown on the top
Let it cool for 10 minutes and enjoy!
