Ingredients

  • 1 cup corn flour (gluten-free)
  • 1/2 cup white rice flour
  • 1/4 cup sugar (more or less to your preference)
  • 2 cups milk of choice
  • 2 eggs

Instructions

  • In a large bowl combine all of the ingredients and mix well (don't worry about over mixing as there is no gluten to breakdown). You made need to add more milk or flour depending on how thick you like your pancakes.
  • Once your batter is well mixed, begin cooking it in 2 tbsp increments (I used a cookie scoop for this).
  • Once all of the pancakes are cooked, enjoy!

Notes

Depending on how long the batter sits and how thick you like your pancakes you may need to add more milk to the mix to get it to the right consistency you want.
