Add water, finely chopped fresh mint leaves, and ground coffee to a quart sized jar
Place a lid on the jar of coffee and water and shake well
Let the coffee mixture sit on the counter for 12-24 hours (I find 24 hours is best if you can wait that long), being sure to shake it atleast once or twice before finished brewing.
Pour into a cup over ice and enjoy!
I like to mix in cashew milk and a little bit of agave for a tasty iced latte
