Ingredients

avocado oil
(or another high temp cooking oil)

celery stalks, diced
1/2
onion, chopped
1/2
jalapeno, diced
1/2
bell pepper, diced

cups
chicken broth
(double check it's GF)

can of fire roasted tomatoes

cajun seasoning
(double check it's GF, you may need to add more to taste)

andouille sausage, sliced
(double check it's GF)

frozen de-veined shrimp
Instructions
To a pot on medium heat, add the oil, chopped celery, onion, jalepeno, and bell pepper
While stirring occasionally, cook these vegetables until the onion becomes translucent
Once the onion is translucent, add in the chicken broth, fire roasted tomatoes, cajun seasoning, sliced andouille sausage, and frozen shrimp.
Bring the pot of ingredients to a boil and then reduce to a simmer
Let it cook uncovered at a simmer for until it thickens down (around an hour)
Then serve and enjoy!
