Gluten-Free Snowball Recipe

This gluten-free Snowball recipe is simple and delicious.

Ingredients

  • 2 cups gluten-free flour (we used King Arthurt Gluten-Free Measure for Measure flour, but if you're using you're own blend make sure you add xanthan gum if it's not already in the mix)
  • 3/4 tsp salt
  • 1 cup butter (or use vegan butter, or coconut oil)
  • 1/3 cup sugar
  • 1 1/2 tsp vanilla extract
  • 2 cups pecans (can also use chocolate chips, crushed peppermint, almonds, or walnuts)
  • 1 1/2 cup powdered sugar

Instructions

  • Preheat oven to 325F
  • Line a baking sheet with parchment paper
  • Combine and mix Gluten Free or Almond Flour, Unsalted butter or Vegan Butter, sugar, vanilla, and salt until the dough forms
  • Once you have a solid dough, add in chopped pecans -or almonds and walnuts- and any additional add ins you desire (mini chocolate chips and peppermint)
  • Scoop the dough into small balls (about 1 tbsp for each snowball) onto the parchement paper lined baking sheet
  • Bake in the preheated oven for 15-20 minutes or until the bottom is light brown
  • Let the snowballs cool completely on a cooling rack, in the freezer or fridge
  • Once cooled, roll them in powdered sugar and enjoy or store for the future!
