Brussels Sprout Salad

A salad made with Brussels Sprouts and a lemon dressing

The Salad

  • 1 lb chopped Brussels sprouts
  • 10 sliced bacon
  • 1/2 cup smoked gouda, shredded
  • 1/2 cup chopped pecans
  • 2 tbsp oil of choice

The Dressing

  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tsp dijon mustard
  • 2 cloves garlic, minced
  • salt and pepper to taste


  • Cook bacon on both sides until crispy. Dab each slice with a paper towel to soak up the grease. Break apart bacon into small pieces. Set aside
  • Toast chopped pecans until browned. Set aside.
  • Add oil of choice and brussels sprouts into the skillet and cook until golden brown on the edges.
  • In a separate bowl combine the dressing ingredients until well mixed.
  • Add in the dressing, nuts, Gouda cheese and bacon to the cooked Brussels sprouts and mix until fully combined, then enjoy!
