One Pot Chicken and Rice

Ingredients

  • 1 lb chicken (chicken breast, chicken thighs, etc.)
  • 1 cup white rice
  • 2 cups frozen broccoli (or one 12oz bag)
  • 1 1/2 cup chicken broth
  • 1 cup shredded cheese of choice
  • salt and pepper to taste
  • other spices to taste

Instructions

  • Cut your chicken into ~1 inch cubes
  • On medium heat, brown the cut chicken in a large pot (you may use a tbsp of oil if desired)
  • Once the chicken is browned, push it to the side of the pot using a spatula
  • In the grease of the chicken, toast the rice on the empty side of the pot for about a minute
  • Once the rice is toasted, pour in the chicken broth and stir it in until well-combined with the chicken and rice
  • Now bring the pot to a simmer and cover and cook for 24 minutes
  • After the dish has been cooking for 24 minutes, remove the lid and sprinkle the frozen broccoli on top
  • Mix the broccoli in and then cover the pot again and cook for another 6 minutes
  • Once the broccoli is cooked into the chicken and rice, mix in the shredded cheese and enjoy!

Notes

Add in diced onions and garlic when browning the chicken for extra flavor.
