Ingredients

  • 1/2 cup almond flour
  • 1/4 cup tapioca flour
  • 1 tsp xanthan gum
  • 1/2 tsp baking powder
  • 1/4 cup butter, melted
  • 1/4 cup heavy cream
  • 1/2 tsp apple cider vinegar
  • 1 large egg
  • 1/2 cup mozzarella, shredded
  • 1/4 cup cheese mix (parmesan, asiago and romano cheese in equal parts)

Instructions

  • Preheat the oven to 400F/190C
  • Line a cookie sheet with parchment paper and set it aside
  • Mix almond flour, tapioca flour, xanthan gum, baking powder, and salt in a bowl and set it aside
  • Place butter, cream, and apple cider vinegar in a saucepan over medium heat
  • Add the butter mixture into the dry mixture and combine.
  • Add in the eggs and cheese to the mixture and mix until a dough consistency is formed
  • Use a #60 cookie scoop to portion the dough, roll each portion into a ball and place it onto your prepared cookie sheet
  • Bake for 20 minutes, or until the rolls start to brown on the top
  • Let it cool for 10 minutes and enjoy!
