Gluten-Free Snickerdoodle Recipe

Delicious gluten-free snickerdoodles (or cinnamon sugar cookies).

Ingredients

  • 2 1/2 cup bobs red mill gluten-free 1:1 flour (substituting may seriously change the outcome of the cookies)
  • 1 tsp baking powder
  • 1 pinch salt
  • 1 cup white sugar
  • 1/2 cup melted butter (or coconut oil)
  • 2 eggs (or egg replace or flax eggs)
  • 1 tsp vanilla extract
  • cinnamon sugar (mix 2 tbsp sugar with 1 tsp cinnamon) (for rolling)

Instructions

  • Preheat oven to 350F
  • In a small bowl combine the sugar and cinnamon for rolling
  • In another bowl combine the flour, salt and baking powder.
  • In the bowl of your stand mixer or in normal bowl cream together the butter and sugar.
  • Add in the eggs and vanilla extract and mix well
  • Now, slowly add the flour mixture into the butter and egg mixture until a dough-like mixture forms (you made need to add more flour)
  • Shape the dough into small balls and roll into the cinnamon-sugar mixture
  • Place the cookies on a foil-lined baking tray (do not flatten the cookies)
  • Bake for 10-12 minutes
  • Allow cookies to rest on the baking sheet before allowing to cool completely on a rack.
  • Enjoy

I made this with King Arthur cup for cup and it came out yummy too!
