Gluten-Free Snickerdoodle Recipe
Delicious gluten-free snickerdoodles (or cinnamon sugar cookies).

Ingredients
2 1/2
cup
bobs red mill gluten-free 1:1 flour
(substituting may seriously change the outcome of the cookies)

tsp
baking powder
1
pinch
salt
1
cup
white sugar
1/2
cup
melted butter
(or coconut oil)
2
eggs
(or egg replace or flax eggs)
1
tsp
vanilla extract
cinnamon sugar (mix 2 tbsp sugar with 1 tsp cinnamon)
(for rolling)
Instructions
Preheat oven to 350F
In a small bowl combine the sugar and cinnamon for rolling
In another bowl combine the flour, salt and baking powder.
In the bowl of your stand mixer or in normal bowl cream together the butter and sugar.
Add in the eggs and vanilla extract and mix well
Now, slowly add the flour mixture into the butter and egg mixture until a dough-like mixture forms (you made need to add more flour)
Shape the dough into small balls and roll into the cinnamon-sugar mixture
Place the cookies on a foil-lined baking tray (do not flatten the cookies)
Bake for 10-12 minutes
Allow cookies to rest on the baking sheet before allowing to cool completely on a rack.
