Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1/3 cup strawberry syrup (I used Wabry)
  • 1/2 cup nut butter of choice (I used cashew)
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/2 tsp baking powder

Instructions

  • Preheat oven to 350F
  • Line a loaf pan with parchment paper, foil, or grease well
  • Combine all ingredients into a blender
  • Blend on high until smooth and creamy (don't worry about over mixing, there is no gluten to breakdown)
  • Let sit for 15 minutes (this helps create a fluffier blondie)
  • Now, pour the blondie batter into the loaf pan (if you want to be extra, pour some strawberry syrup on top to add a decorative swirl pattern)
  • Bake in the oven for ~40-50 minutes until a fork comes out clean after sticking it in the center of the loaf
  • Remove from the oven and let cool.
  • Top with fresh strawberries if desired and enjoy!
