Ingredients

chickpeas, rinsed and drained
1/3

strawberry syrup
(I used Wabry)
1/2
cup
nut butter of choice
(I used cashew)

vanilla extract

Instructions
Preheat oven to 350F
Line a loaf pan with parchment paper, foil, or grease well
Combine all ingredients into a blender
Blend on high until smooth and creamy (don't worry about over mixing, there is no gluten to breakdown)
Let sit for 15 minutes (this helps create a fluffier blondie)
Now, pour the blondie batter into the loaf pan (if you want to be extra, pour some strawberry syrup on top to add a decorative swirl pattern)
Bake in the oven for ~40-50 minutes until a fork comes out clean after sticking it in the center of the loaf
Remove from the oven and let cool.
Top with fresh strawberries if desired and enjoy!
