I have been loving this Blueberry Chia Seed Pudding recipe! I’ve been enjoying tweaked versions of it over the past few weeks because I just can’t get enough! Part of why I love chia seeds so much is because they are so versatile! Naturally gluten-free and vegan, chia seeds are a great source of plant-based protein, healthy fats, and calcium.

Chia seed puddings make for the perfect prep-ahead fiber-rich breakfasts or desserts (especially when topped with granola). The fresh blueberries mixed into this layered chia seed pudding and blackberry chia seed jam is filling and absolutely scrumptious! It makes for a light refreshing breakfast that will provide you with tons of energy without making you feel “heavy”.

Blueberry Chia Seed Pudding Recipe

Servings: 8 1/2 cup servings

Ingredients

  • 3/4 cup Chia Seeds
  • 4 cups cashew milk or other milk of choice
  • 2 tbsp Agave
  • 1 cup blackberry chia seed jam
  • 1/2 cup fresh blueberries

Instructions

  • Add 4 cups milk of choice into a quart sized jar or container
  • Add and stir in the agave into the milk
  • Add the 3/4 cup chia seed into the jar/container
  • Place a lid on the jar/container and shake well!
  • Let the chia seed pudding sit in the fridge overnight to thicken
  • After letting the chia seed pudding chill in the fridge, scoop out the pudding and the blackberry chia seed jam in layers into a small bowl or jar (this should make a little over a 1/2 cup serving)
  • Top with fresh blueberries and Enjoy!
