Have we talked about how much I love vinegar yet? No? Well, I love it so much that I actually used to own my own raw vinegar production company (a throwback to my good old high school days).

Why do I love vinegar? For the same reason, I love pineapple and other citrus fruits! It’s acidic and I love it!

I remember back when I used to work at Panera, I used to chow down on the leftover lemon wedges at the end of my shift during closing.

I just love the sour and tangy taste of acidic foods. So naturally, I love this Honey Lime Dressed Citrus Salad.

Don’t worry, I know that most people don’t like a huge sour punch when eating their fruit (despite my own odd preferences) so trust me when I say that this recipe has the perfect balanced between sweet and sour.

Honey Lime Dressed Citrus Salad

Ingredients

For the Salad

  • 1 lime
  • 2 navel oranges
  • 2 blood oranges

For the Dressing

  • 2 tbsp lime juice
  • 2 tsp honey
  • 3-6 mint leaves chopped

Instructions

  • Taking a sharp knife, carefully cut down the sides of the citrus fruit so that their fruit is exposed (make sure to take off the outer membranes too)
  • After cutting off the peels of the citrus fruit, take your knife and segement out the fruit slices (following the the natural lines)
  • Add the citrus fruit segments to a large bowl
  • In a smalled bowl, mix the dressing ingredients together unti well-combined
  • Once the dressing is well mixed, pour it over the citrus salad and mix until the fruit is coated evenly
  • Enjoy!
