Chia seeds are packed full of complete plant-based protein. This means that the protein found in chia seeds contains all of the essential amino acids. This is amazing because finding complete plant-based proteins can be hard.

Making chia seed puddings (or chia pods) can be an easy way to get in some extra protein during the day. Not only that but it’s also an amazing way to give your body some probably much-needed fiber. (Just make sure you drink enough water when you eat them. Remember, when you increase your fiber intake you have to increase your water intake.)

These birthday cake chia pods are gluten-free and vegan.

They make for a fun and delicious snack, breakfast, or dessert. I love throwing them in my bag in the morning and enjoying them for breakfast when I get to school!

This recipe used Color Kitchen Food’s sprinkles and food dye. Use of the dye is completely optional and is just for aesthetic purposes. Gluten Free Cake Batter Chia Pod

Servings: 8 1/4 cup servings

Ingredients

  • 2 cups milk of choice (I used unsweetened cashew milk)
  • 1 tsp vanilla extract
  • 1 tsp Lemon Juice
  • 2 tbsp maple syrup
  • 2 tbsp coconut butter
  • 2 tbsp cashew butter
  • 2/3 cup Chia Seeds
  • 1 packet Color Foodfood coloring (optional)
  • 1 tbsp color food sprinkles (optional)

Instructions

  • In a blender add milk of choice, the Color Food'sfood coloring, vanilla extract, lemon juice, maple syrup, coconut butter, and cashew butter
  • Blend ingredients until smooth
  • Transfer to a jar and mix in chia seeds
  • Let chia seeds and blended mixture sit for 2 hours (or overnight)
  • Transfer to small containers to enjoy later
  • Optional: Top with Color Kitchen sprinkles for a fun addition
