The History Behind Stuffing

No one quite exactly knows when stuffing came to be but stuffing is essentially a cooking technique. It’s where you stuff an animal with food to help retain moisture and boost flavor.

During the holidays, stuffing also known as dressing is traditionally done with a mixture of bread, celery, onion, carrot and herbs.

Often times, there will be a side of stuffing served on the dinner table for those who specifically want stuffing on their plate.

However for those living gluten-free, the traditional dressing with bread is not safe. Instead, we must prepare a less traditional stuffing with other starches.

For those who would like a quick and easy holiday themed meal, this gluten-free Turkey Rice Stuffing is perfect. It’s quick and easy to make plus it’s got tons of holiday flavor.

I personally think it makes the perfect dinner and it’s an easy way to use up any leftover turkey you may have from Thanksgiving or Christmas dinner. Just skip the browning the turkey step and instead add in the left-over turkey pieces with the rest of the ingredients and cook.

Ingredients

  • 2 tbsp butter
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 1 apples
  • 1 lb ground turkey, raw
  • 3 cups chicken broth
  • 1/4 cup dried cranberries
  • 1 cup white rice, uncooked
  • 1/2 cup pecans

Instructions

  • In a large pan, saute chopped onion, celery, carrot, and apples for 3-5 minutes on medium/low
  • Bringing the heat up to medium, brown the turkey along with the vegetables, until the turkey is 50% pink and 50% cooked
  • Once the turkey is browned, add in rice, chicken broth, and cranberries and mix well
  • Cover the turkey, rice, and vegetable mixture and cook on medium for about 24 minutes
  • After 24 minutes, remove the lid and mix in the pecans (you could also add frozen green beans in here too if you want)
  • Cover the pan again and cook for another 4 minutes
  • Once done, enjoy!
