Ingredients

onion, chopped

celery stalks, diced

carrots, diced

sweet potato, diced

ground turkey

cannellini beans, rinsed

garbanzo beans, rinsed

gluten-free chicken broth
Instructions
To a large pot add in the oil, onion, celery, carrots, and sweet potato
Cook on medium heat until the onions are slightly translucent
Once onions are slightly translucent add in the turkey and brown it
Once the turkey is brown, add in the rinsed beans and the chicken broth, cover and let cook for about 40 minutes on low
Once done, serve and enjoy!
