Avocado Egg Salad - Gluten-free and Dairy-free
A fresh avocado egg salad recipe!
Servings: 4 people
- 8 large hard-boiled eggs
- 1 small avocado
- 1/4 cup celery, finely chopped
- 1/4 cup fresh dill, finely chopped
- 2 tbsp lemon juice, fresh
- 2 tbsp pickled red onions, finely chopped
- 1/2 tsp salt
Take hard-boiled eggs out of the shell
Roughly chop the eggs and add them to a large bowl
In a separate bowl rough mash the avocado.
Add avocado, dill, lemon juice, celery, pickled red onions, and salt to the bowl.
Mix until well combined
Add more salt and lemon to taste and enjoy!
