Gumbo is the official state cuisine of Louisianna in the United States. Much like this gluten-free Shrimp and Sausage Gumbo, it’s a spicy stew with mixed meats, roux, and ingredients. There are many ways to make Gumbo, and I’m all about the easy ways to cook!
This gumbo is gluten-free because we won’t use a roux, but don’t worry, this gumbo will still be thick and delicious!
This Shrimp and Sausage gumbo is made with a gluten-free roux. While often made with wheat flour, roux’s can be made with other types of flour too. The basic way to make a roux is by combining hot cooking fat with flour until it forms a paste of different colors. For more on using and making a roux to thicken dishes, check out this post.
This gluten-free Shrimp and Sausage Gumbo recipe requires quite a few ingredients BUT don’t let it intimidate you. It’s pretty much chop, saute, dump, and go.
First, we’ll start with the oil, chopped celery, onion, jalapeno, and bell peppers. This it’s what’s known as Mirepoix when cooking. It’s the vegetable flavor base for the recipe. If you don’t want to chop these vegetables yourself, consider getting a bag of frozen mirepoix (you’ll just miss out on the kick from the jalapeno). (I’m all about making cooking easy around here).
Then we’ll move into adding in the gluten-free chicken broth, fire-roasted tomatoes, cajun seasoning (I like this one), sliced gluten-free andouille sausage, and the frozen shrimp. We’ll bring this to a boil and then reduce it to a simmer and let it cook down until it thickens (around an hour).
Then you’ll have a delicious pot of gumbo to enjoy. And that’s about it. This is an easy gluten-free 1 dish meal that pretty much anyone can prepare!
