Easy Zucchini Hummus Recipe (Zummus)

This Easy Zucchini Hummus Recipe is a crowd favorite in my family. I am a huge high-volume low-calorie eater. I like to eat a lot of food; my appetite is enormous and that is something I have struggled with since I can remember. One of my coping methods (healthy or not) is to develop recipes that are lower in calories but still allow me to eat however much I want. Making this Easy Zucchini Hummus Recipe is one of my favorite ways to do this! For only about $2.50 to make the entire recipe (and only $0.31 for a portion), this recipe is affordable and delicious!

Makes about 2-3 cups (depending on how big the zucchinis are) which is about 8 servings

Serving size is about 1/4 cup

Ingredients:
  • 2 Zucchinis
  • 1 Tbsp Avocado Oil
  • ½ Tsp Salt (or TT)
  • 1 Tbsp Garlic Powder
  • 1 Tsp Cumin Powder
  • ¼ Cup Lemon Juice
  • ¼ Cup Tahini
  • Paprika and Pepper TT
Directions:
      • Wash, peel, and dice zucchinis
      • On a stove, bring a pot of water to a simmer
      • Simmer zucchini until al dente
      • Drain zucchini
      • In a food processor add all of the ingredients and process until smooth
      • Enjoy with some fresh vegetables!
