Antioxidant wise, carrots have what are known as carotenoids and anthocyanins. Those are big words to say that they have pigments in them to give them their color. And those pigments are powerful antioxidants that are not only precursors for nutrients (like vitamin A) but also support your health.

Additionally, they are full of dietary fiber. Specifically insoluble fiber which helps keep your digestive system healthy and moving.

Basically, carrots are nutrient powerhouses waiting to nourish you. If you enjoy them, adding them to your diet can be beneficial.

How to Cook With Carrots

The best way to prepare carrots is the way you enjoy them. If you’re more likely to eat them when they are roasted with a little bit of oil in the oven, then make them that way.
