Almond Joy Bliss Bites

I usually title these types of recipes as energy bites but I thought Almond Joy Bliss Bites was more appropriate than Almond Joy Energy bites. Especially because each bliss bite offers a divine and decadent experience!

These bites definitely earned the bliss bite title!

Being gluten-free with celiac disease, Halloween is always a struggle. Especially because I embrace a healthy lifestyle
(which I think is important for those with Celiac as nourishing your body appropriately is vital when you have an auto-immune disease!).

Tired of struggling to find safe and healthier treats during this fun-filled and tricky holiday, I decided to come up with my own solution.

These Almond Joy Bliss Bites are a healthier option to the real thing and I think you might even prefer them over the real thing (I know me and my family does)! Not to mention they are super fast and easy to make. Honestly, there is no reason why you shouldn’t make this recipe (unless you are one of the unfortunate people who are allergic to coconut. If that’s the case you have my sincerest empathy)


These Almond Joy bliss bites have are a mix between almond joys and a classic no-bake cookie.

They are truly a treat for those celebrating Halloween in a healthier manner. Especially for those who are dairy-free, gluten-free, and vegan.

Almond Joy Bliss Bites

Ingredients

  • 3/4 cup shredded coconut + extra for rolling
  • 1 tbsp Cocoa Powder
  • 2 tbsp chocolate chips (vegan & gluten-free)
  • 12 almonds whole
  • 2 tbsp coconut butter
  • 2 tbsp almond butter
  • 2 tbsp Agave

Instructions

  • In a bowl mix together the shredded coconut, cocoa powder, and chocolate chips
  • Then add in almond butter, cocotnut butter, and agave
  • Using your hands mix together the ingredients well until dough-like consistency forms
  • Once dough-like consistency is formed, roll into 1 tbsp-sized balls, placing 1 whole almond in the center
  • Enjoy!

Notes

If you don't have coconut butter you can use almond butter in it's place. The bliss bites just won't resemble almond joys as much as they would if you used coconut butter.

Vegan Spicy Creamy Carrot Soup

This Vegan Spice Carrot Soup is a must-try! It’s full of flavor, easy to make, and delicious.

I have a confession to make (though if you follow my blog you probably already know this), I am not a vegan.

I’d like to say I am plant-based or even plant-focused. Meaning I try my best to avoid animal products but that doesn’t happen all of the time.
(Learn about the difference between a vegan and a plant-based lifestyle here!)

I am mindful of the animal products I eat. In fact, I don’t ever drink milk, and I only have cheese when someone else is making me food.

Additionally, I don’t crave meat. Meat is just not something my body wants, it would just rather have complete plant-based proteins. What can I say?

However, despite me not being vegan, this recipe is. This Vegan Spicy Creamy Carrot Soup has no animal products in what-so-ever. Additionally, it’s gluten-free.

I know, it’s the gift that just keeps on giving.

This soup is delicious served warm or cold! Making it a tasty and refreshing option for the summer, and a warming and spicy choice during the fall and winter!

Bonus: This recipe is super healthy and easy to make! (You know me, I am a sucker for keeping things simple but nutritious in the kitchen!)

Vegan Spicy Creamy Carrot Soup

Ingredients

  • 6-8 whole carrots washed well and roughly chopped
  • 1 large yellow onion roughly diced
  • 4 cloves garlic
  • 1 tbsp avocado oil
  • 1/2 tbsp salt
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/4 tsp ground pepper
  • 1/2 tsp chilli powder
  • 1 28 oz can whole tomatoes
  • 1 can Full Fat Coconut Milk

Instructions

  • Toss chopped carrots and onion in avocado oil, salt, pepper, and cumin powder
  • Add the chopped carrots and onions onto a pan, and roast them at 350 degrees Fahrenheit until they are soft (about 45 minutes)
  • Once cooked, remove the carrots and onions from the oven
  • Add the roasted carrots and onions to a blender with the coconut milk, whole tomatoes, smoked paprika, and chili powder
  • Blend until smooth
  • Enjoy!

Notes

Serve warm or cold!
Store in airtight container in the fridge for up to 5 days.
