This Creamy Carrot Soup is both gluten-free and dairy-free. That means no gluten or dairy was used to make it. You could make it fully vegan but substituting the gluten-free chicken broth with gluten-free vegetable broth.

Additionally, this recipe can be Fasano or Non-Responsive Celiac Diet friendly. Just substitute the canned chicken broth for Fasano friendly chicken broth, or coconut milk.

It also can compliant with a low-nickel diet if the canned broth used is substituted for homemade broth.

More importantly, this recipe features potatoes and carrots, which are the star of the show. Blended together, these two root vegetables create a creamy and delicious flavor.

This creamy carrot soup recipe is super simple but don’t let that fool you. This recipe might be easy but it packs a ton of flavor.

The carrots in this recipe add a sweetness to it that balance the potatoes and broth. It is essential that you wash your carrots before using them for the best taste. You may also substitute baby carrots for whole carrots in this recipe if it’s easier.

The potatoes in this recipe add creaminess and thickness to the recipe that is unmatched. Building on the potato and carrot match-up in vegan cheese sauces, these two flavors build a nice creamy flavor together with out needing any dairy.

The broth in this recipe adds more flavor and helps turn it into soup. Remember, if you’re vegan, use vegetable broth. And if you’re looking for low-nickel or Fasano diet friendly meals, use homemade broth for this recipe.

Then we get into the spices! This recipe calls for salt, pepper, and garlic. However, this is to build a solid soup base, you can add other spices as you desire. (I like chili seasoning as it adds a nice kick to the soup).

This carrot soup recipe is super simple. To make it, all you need to do is:

  1. Wash your potatoes and carrots
  2. Roughly chop your potatoes and carrots
  3. Boil the potatoes and carrots and soft and tender
  4. Blend the carrots and potatoes with broth and spices until soupy
  5. Enjoy

Yeah, this creamy carrot soup is literally that simple. But again, don’t let that fool you. Simple does not have to mean boring or plain.

Now on to the fun part, what goes well with carrot soup? And I don’t think anyone will be surprised when I say: a lot!

Equipment

  • 1 blender

Ingredients

  • 1/2 lb whole carrots
  • 4 medium potatos
  • 1 tsp salt (or to taste)
  • 1/2 tsp ground black pepper (or to taste)
  • 2 cloves fresh garlic
  • 14 oz canned gluten-free chicken broth (or vegetable broth if vegan, or homemade if on a low-nickel or Fasano diet) add more broth if you want the soup to be less thick

Optional

  • 1 tsp smoked paprika (not Fasano diet friendly)
  • 1 tbsp chili powder (not Fasano diet friendly)

Instructions

  • In a large pot, bring salted water to a boil
  • While waiting for the water to boil, roughly chop the carrots in rounds and potatoes into cubes
  • Once the water is boiling the and the vegetables are chopped, boil the potatoes and carrots until tender (around 30-40 minutes)
  • Once the potatoes and carrots are tender to touch (should easily be mashed with light pressure from the back of a spoon) then remove from heat
  • Place the boiled carrots, potatoes, broth, salt, pepper, garlic, and optional spices in a blender and blend until smooth and creamy
  • Enjoy!
